Dalma is one of the most popular Odisha Authentic food.In Odisha Everyone cooking Dalma in Puja,Sankranti.Festival etc...

Dalma is combination of Moong dal,Pumkin,Papaya,Raw Banana,Brinjal etc...I cooked Dalma with Arhar dal & left over vegetables in my fridge.

If you don't have all vegetables,you can prepare Dalma whatever vegetables you have(excluding Karela).But the key ingredients of Dalma is Roasted Jeera & Dry chilli powder and Ghee.
Dalma is very good for health.You can have this with Roti, Rice, Paratha, Chakuli Pitha(Dosa).

Ingredients:

  • Arhar dal - 1/2 cup
  • Chana dal - 1/4 cup(optional)
  • Cauliflower - 10 florets
  • Ridge gourd - 1 small
  • Green chilli -1 
  • Carrot - 1 small
  • Beans - 10
  • Potatoes - 2 medium
  • Tomato - 1 medium
  • coriander leaves - 1 tbsp
  • Turmeric - 1 tsp
For Tempering:
  • Ghee - 1 tbsp
  • Refined oil - 2 tbsp
  • Jeera/cumin - 1 tsp
  • Grated ginger - 1 inch
  • Bayleaf - 1
  • Dry Chilli(broken) - 2
  • Coriander powder - 3/4 tsp
  • Coconut - 1/4 cup
  • Turmeric - 1/2 tsp
  • Chilli powder - 1/2 tsp or as required

For Masala powder : Dry roast it & make it powder

  • Jeera/Cumin seeds - 2 tbsp
  • Dry chilli - 4

Method:

  • Wash Arhar dal and chana dal.
  • In a pressure cooker put washed dal,all left over vegetables,tomato,water & mix well.
  • Add salt,turmeric and mix well.
  • Cover and cook on medium flame for atleast 2 whistle.
  • Release the pressure naturally.
  • Now dal and vegetables cooked perfectly.
  • Its time to tempering.
  • Heat ghee or oil.
  • Add bayleaf,Cumin seeds,dry chilli and grated ginger.
  • Saute it on low flame for 1 min.
  • Add cooked tomato and mash it.
  • Put chilli powder,turmeric and stir it.
  • Add coriander powder,little water and cook for 1 min on low flame.
  • Add coconut and mix it;cook for 1 min.
  • Finally add cooked dal and vegetables;mix well.
  • If required add little water and cook for 2 mins on medium flame.
  • add chopped coriander leaves and mix well.
  • Now its time to sprinkle roasted cumin and dry chilli powder and mix well.
  • Serve hot with Rice or paratha.

  • Now its time to sprinkle roasted cumin and dry chilli powder and mix well.

  • Serve hot with Rice or paratha.

Vegetable sagu

Ingredients:

  • Mixed veggies (Beans, carrots, peas, potatoes)(chopped) - 2 cups 
  • Oil - 1-2 tsp(ତେଲ
  • Mustard seeds - 1/2 tsp (ସୋରିଷ
  • Curry leaves - 3-4 
  • Onion (chopped) - 1/2 (ପିଆଜ
  • Turmeric powder- 1 pinch(ହଳଦୀ ଗୁଣ୍ଡ)
  • Salt as per taste(ଲୁଣ)
For the Masala:

  • Grated coconut - 2 - 3 tbsp(ନଡିଆ କୋରା)
  • Cinnamon stick - 2"(ଡାଲଚିନି
  • Cloves - 5(ଲବଙ୍ଗ)
  • Black Peppercorns - 4-5 (ଗୋଲ୍ ମରିଚ
  • Fresh Ginger - 1 inch(ଅଦା)
  • Onion - 1/2(ପିଆଜ
  • Cilantro(chopped) - 1 tbsp(ଧନିଆ ପତ୍ର)
  • Green chilies - 2-3(ଲଙ୍କାମରିଚ)

Method:

  • Cook the veggies with some salt and water until done. 


  • For the masala, grind all the ingredients to a smooth paste with some water.

  • Heat oil in a heavy bottomed pan; Temper with mustard seeds, turmeric, curry leaves.
  • Add finely chopped onions and fry until done,add cooked veggies and the masala paste.

  • Mix and allow it to boil well; Add salt as required. Add water to get the desired consistency.
  • Remove from stove and serve hot with pooris, dosa, chapati or even rice.

Saaga Dalma(ଶାଗ ଡାଲମା)

Ingredients:

  • Chopped palanga/spinach - 2 cup(ପାଲକ୍)(Instead of palanga/spinach you can use other leaf also)
  • Channa dal - 1 cup(ଚଣା ଡାଲି
  • Pumpkin(cube size) - 1 cup(କଖାରୁ)
  • Potato(cube size) - 1/2 cup(ଆଳୁ
  • Brinjal(cube size) - 1/2 cup(ବାଇଗଣ)
  • Ginger(chopped) - 1 tsp(ଅଦା)
  • Beans(1 inch length wise) - 1 cup(ବିନ୍ଶ୍)
  • Dry red chillis(broken) - 3(ଶୁଖିଲା ଲଙ୍କା)
  • Ghee - 2 tsp(ଘିଅ)
  • Cumin seeds - 1 tsp(ଜିରା)
  • Roasted cumin and dry chilli powder - 1 tsp(ଜିରା ଲଙ୍କା ଗୁଣ୍ଡ)
  • Turmeric powder - 1/2 tsp(ହଳଦୀ ଗୁଣ୍ଡ
  • Salt to taste(ଲୁଣ)

Method:

  • Wash and soak the channa dal for 1 hours.
  • Take the channa dal, pumpkin, potato,beans along with salt and turmeric in a pressure cooker. Cook for 1 whistle on high flame.
  • Open the pressure cooker cover and put chopped panak/spinach and brinjal, mix it and cook for 1 whistle on medium flame.
  • Heat ghee in the kadai. Add broken red chilli,cumin seeds and chopped ginger and saute it for a minute.
  • Then pour mixture in to the kadai and finally add Roasted cumin and dry chilli powder
  • Mix it properly and Simmer for 2 mins.
  • Serve hot with rice/roti.

Saga khada raita(ଶାଗ ଖଡା ରାଇତା)

Ingredients:

  • Kosala Saga khada - 1 bunch(ଖଡା)
  • Kosala saga(chopped) - 1 cup(ଶାଗ)
  • Potato(cube size) -2 medium(ଆଳୁ)
  • Pumkin(cube size) - 100 grm(କଖାରୁ)(you can add other vegetables also)
  • Badhi(semi crushed) - 10
  • Tomato - 1 medium(ଟମାଟର)
  • Onion(chopped) - 1 medium(ପିଆଜ)
  • Ginger - 1/2 inch(ଅଦା)
  • Garlic - 6-7 cloves(ରସୁଣ)
  • Jeera - 1/2 tsp(ଜିରା) 
  • Turmeric powder - 1 tsp(ହଳଦୀ ଗୁଣ୍ଡ )
  • Dry chilly - 1(ଶୁଖିଲା ଲଙ୍କା)
  • Chilly powder - 1/2 tsp(ଲଙ୍କା ଗୁଣ୍ଡ)
  • Curry powder - 1/2 tsp (ତରକାରୀ ମସଲା)
  • Oil - 2-3 tbsp(ତେଲ)
  • Salt to taste(ଲୁଣ)

Method:

  • Clean the vegetables and cut into pieces as required and keep a side. 
  • Make a fine paste of ginger, garlic, jeera,onion, dry chilly and tomato.
  • Heat the oil in a pan.
  • Fry the badhi and keep a side
  • Add saga danka,potato,pumkin,salt and turmeric power and stir it till it semi cooked and keep a side.
  • In the same pan add little oil and put masaala paste and stir it for 2-3 mins.
  • Add salt,chilly powder and turmeric powder and cover the lid and cook till oil comes out from the mixture.
  • Put vegetables into the mixture,mix well and cover the lid for 5-10 mins till vegetables cooked properly.
  • Finally add badhi and cook for 5 mins.
  • Server hot with rice and dal.



Matar chatpatta (ମଟର ଚଟ୍ ପଟ୍)

Ingredients:

  • Green peas - 1 cup(ମଟର)
  • Tomato(chopped) - 1-2 medium(ଟମାଟର)
  • Green chilly(chopped) - 2
  • Turmeric - 1/2 tsp(ହଳଦୀ ଗୁଣ୍ଡ )
  • Onion(chopped) - 2 medium(ପିଆଜ)
  • Mustard seeds - 1 tsp(ସୋରିଷ)
  • Garlic clove(chopped) - 4-5(ରସୁଣ)

Method:

  • Heat the oil in a pan.
  • Put the mustard seeds and let them crackle, then add chopped onion, green chilly, chopped garlic,turmeric powder and saute it till onion turns light brown color.
  • Add green peas and cook it in low flame for 5 mins.
  • Finally add tomato and salt and mix it well, cover and cook it till tomato became mashy.
  • After that saute it for couple of time and server hot with paratha/roti.

Masoor dal and vegetable chadchadi

Ingredients:

  • Masoor dal -1 cup
  • Beans - 1 cup
  • Pumkin(cube size) - 100 grm
  • Papeya(cube size) - 1/2 of 1 papeya
  • Potato(cube size)- 1
  • Dry chilli - 1
  • Carrot - 1/2 cup(you can add more vegetables)
  • Tomato(chopped) - 2 medium
  • Onion(chopped) - 2 medium
  • Cumin seeds - 1 tsp
  • Green chilli(slice) - 2
  • Turmeric powder - 1 tsp
  • Chilli powder - 1 tsp
  • Curry powder - 1 tsp

 Method:

  • Boil the masoor dal, all vegetables and tamato,with adding some water, salt, turmeric powder and green chilli in a pressure cooker.
  • Make the coarse paste of giner, garlic, cumin seeds and keep a side.
  • Heat the oil in a pan.
  • Add dry chilli and chopped onion and saute it till onion became light brown color.
  • Then, add masala paste, turmeric powder, chilli powder and salt and saute it for couple of minute.
  • Finally add chopped tamato, mix it well and cover it till tomato became soft.
  • Lastly add boiled vegetables and curry masala and mix it properly and cook for 5 mins.
  • Server hot with chapati/paratha.




Ghanta Tarkari(Mix Curry)

Ingredients

  • Amurta Bhanda (Papaya)- 200 gm
  • Beans – 80 gm
  • Sajana Chhuin( Drumstick)- 60 gm
  • Baigana(Brinjal, Eggplant)- 175gm
  • Janhi( Ridge Gourd)- 130 gm
  • Bandha Kobi( Cabbage)- 150 gm
  • Mati Aloo(Yam) – 100 gm
  • Kakharu( Pumpkin)-100gm
  • Moola( Radish)- 100 gm
  • Barbati( Runner Beans) -100 gm
  • Aloo( Potato) -150 gm
  • Tomato – 100gm
  • Piaja ( Onion)- 100g
  • Kabuli Chana( Chick Peas)-50 gm
  • Nadiya(Coconut) – 25 gm
  • Dhania Patra (Coriander Leaves, Cilantro)- 25 gm
  • Ada (Ginger) – 25 gm
  • Rasuna(Garlic) – 25 gm
  • Refine Tela (Refined Oil) – 100 gm
  • Haladi Gunda (Turmeric Powder)- 1 tsp
  • Pancha Phutan ( Pancha Phoran)- 4 tsp
  • Sukhila Lanka (Dry Chili) – 1 or 2( as per taste)
  • Teja Patra( Bay Leaf)- 2 pcs
  • Tarkari Masala Powder( Curry Powder) – 2tsp
  • Lanka Gunda( Chili Powder)- 1tsp
  • Luna( Salt) – as per taste

Method:

  • Cut the vegetables after thoroughly washing them. 
  • Boil all the pulse seeds after soaking them in water for about 8 hrs. 
  • Make a paste of onion, ginger, and garlic. 
  • Fry cumin seeds and red chilies in a pan and then make rough powder of the same. 
  • Boil all the cut vegetables, pre-boiled seeds, coconut pieces. Add salt, turmeric powder, bay leaves. 
  • Take a tablespoon of oil in another pan and put it on medium flame. Add ½ teaspoon each of cumin seeds and mustard to it. 
  • When mustards start cracking add the paste of onion, garlic and ginger and stir well. 
  • After the paste turns golden brown, add the boiled mixture of vegetables etc. and stir continuously. Put the pan on low flame for 3 to 4 minutes.
  •  Add the cumin seeds and red chilli powder to the pan and stir well. 
  • Now your Ghanta is ready to be served.

  • Potatoe(cube size) - 1(ଆଳୁ)
  • Brinjal (cube size) - 1 medium(ବାଇଗଣ)
  • Red pumpkin(cube size) - 1 cup(କଖାରୁ)(optional)
  • Beans - 1 cup(ବିନ୍ସ୍)
  • carrots - 1/2 cup(ଗାଜର)
  • Garlic cloves(crushed) - 5-6(ରସୁଣ ଖୋଲା)
  • Bhindi - 1 cup (ଭେଣ୍ଡି)
  • Green peas - 1/2 cup(ମଟର)
  • Panch phoron - 1 tsp (five condiments viz. Cumin, aniseeds, nigella seeds and mustard, mixed together in equal proportion)(ପନ୍ଚ୍ ଫୁଟଣ)
  • Mustard oil - 1 tbsp(ତେଲ)
  • Green chillies (slit) - 2
  • Dry chilly - 1(ଶୁଖିଲା ଲଙ୍କା)
  • Onion(slice) - 1 medium(ପିଆଜ)
  • Salt to taste (ଲୁଣ)                                                                                                                                                     
Method
  • Boil the vegetables(you can add more vegetable also)minimum amount of water, green chilli, onion, salt and turmeric powder(Donot boil too much otherwise bhindi fully mashed..atleast 1 whistle is enough to boil in medium flame) .
  • In a kadai heat oil and add Panch Phoron.
  • Add chopped garlic/ginger and dry chili or green chilli.
  • Salute for one minute.
  • Add the boiled vegetables..
  • Serve hot with roti.
