Ingredients:
- Baigan/Brinjal - 1 large(ବାଇଗଣ)
- Onion(chopped) - 1medium(ପିଆଜ)
- Green chillies(chopped)/Roasted dry chilly -2 (ଲଙ୍କାମରିଚ)
- Mustard oil - 1 tbsp(ସୋରିଷ ତେଲ)
- Garlic cloves(crushed) - 4(ରସୁଣ)
- Salt as taste(ଲୁଣ)
Method:

Brush Baigana with oil and roast it on a medium flame.

Frequently turn the brinjal upside down, until fully roasted.

Once done , hold it under running cold water or in a bowl of water. Cool it and peel off the blackened skin.

Mash the flesh.

Add the finely chopped onion, garlic, green chilies, mustard oil,salt and mix it well.

Server with pakhala bhata.
Ingredients:

Gram flour (besan) - 4 tbsp(ବେସନ)
- Turmeric powder - 1/2 tsp(ହଳଦୀଗୁଣ୍ଡ )

Rice flour (chawal ka atta) - 1 tbsp(ଚାଉଳ ଗୁଣ୍ଡ)

Red chiily powder - 1 tsp(ଲଙ୍କା ଗୁଣ୍ଡ)

Salt to taste(ଲୁଣ)
- Oil to deep fry(ତେଲ)
Method:
- Take a bowl, add gram flour, rice
flour, turmeric powder, red chili powder and salt. Mix all the
ingredients well and with the help of little water to make a thick
batter.
- Wash the baigan and cut them into thin round pieces of about 1/4
inch thickness. If there is time to serve keep these cut baingan dipped
in water.
- Put two slices of the brinjal into the batter at a time. Slices should be well coated with the batter on both sides.
- Drop gently into the hot oil and fry till the pakoras begin to turn golden around the edges.
- Take them out on a kitchen towel and serve hot as a snack or with pakhala bhaat as side dish.

- Green peas - 1 cup
- Tomato - 1-2(medium)(chopped)
- Onion - 2 (medium)(chopped)
- Turmeric powder - 1/2 tsp
- Mustard oil - 2 tbsp
- Mustard seeds - 1/2 tsp
- Green chillies - 2(chopped)
- Chilli powder - 1/2 tsp
- Salt to taste
- Coriander leaf for garnishing
Method:
- Roast or boil the brinjal by adding oil.
- When brinjal is roasted, let them cool and then peel off their skin. Run the knife through it and mash it and keep a side.
- Heat the oil in a pan.
- Add mustard seeds,when its cracking,then add chopped green chilli, onion and saute it till onion became light brown color.
- Then add green peas and fry it till green peas is cooked, add chopped tomato,salt,turmeric powder and chilli powder and mix well and cover it till tomato is cooked properly.
- Finally add mashed brinjal and mix well.
- Garnish with coriander leaf and server hot with roti/paratha.

Ingredients:
- Big Eggplant/Brinjal - 1 (ବାଇଗଣ)
- Salt to taste (ଲୁଣ)
- Red Chilli Powder - 1 tbsp or as taste(ଲଙ୍କା
ଗୁଣ୍ଡ)
- Turmeric Powder - 11/2 tsp(ହଳଦି ଗୁଣ୍ଡ)
- Mustard Oil - 2-3 tbsp (ସୋରି ତେଲ)
- Rice flour - 2 tbsp(optional for crispy)(ଚାଉଳ ଗୁଣ୍ଡ)
Method:
- Chop the eggplant into 1/2″ thick circular slices.
- In a large flat dish, mix the turmeric powder, chilli powder, rice flour and salt with a little water to make a medium-thick paste.
- Coat the eggplant slices well with the spice mix.
- Heat the mustard oil in a pan and shallow-fry the brinjal slices till golden.
- Drain on paper towels and serve hot with Paranthas.
