 Buta dali Aloo kakharu curry is very popular dish in our Odia kitchen.I prepared this recipe without Onion and Garlic.I will share again this recipe with onion and garlic.This curry is very delicious and healthy.
You can have this with Poori or Chakuli Pitha(dosa).

Recipe for Chana Dal & Pumkin Curry | Aloo kakharu buta tarkari | ବିନା ପିଆଜ ରସୁଣ ଆଳୁ କଖାରୁ ବୁଟ ତରକାରୀ:

Ingredients:

Chana Dal - 1 cup
Pumkin(cube) - 200 grm
Potato(cube) - 2 medium
Refined oil - 5 tbsp
Cumin seeds - 1 tsp
Bayleaf - 1
Ginger paste - 1 tbsp
Turmeric - 1/2 tsp
Red chilli powder - 1 tsp
Tomato paste - 1 medium
Garam masala - 3/4 tsp
Coriander powder - 1 tsp
Cumin powder - 1 tsp

Method:

  • Boil the chana dal along with water and salt.
  • Heat the oil.
  • Add cumin seeds,when starts cracking put potato and saute it on medium flame till turns light brown color.
  • Then add pumkin and saute it on medium flame for couple of mins.
  • Cover the lid & cook for 3-4 mins on low flame.
  • Open the lid & saute it for 2 min.
  • Transfer to the plate & keep a side.
  • In the same pan add 2 more tbsp of oil.
  • Put bayleaf and cinnamon and stir it for 10 sec.
  • Then add ginger paste and saute it till the raw smell will go.
  • Put turmeric,chilli powder;mix well and saute it for 1 min on low flame.
  • Add tomato paste and stir it for 1 min on high flame(to evaporate water).
  • Then put salt (Remember already added salt while boil chana dal).
  • Add coriander and cumin powder and saute it till masala cooked well.
  • Then add fried potato and pumkin and saute it for 2-3 mins on low flame.
  • Pour dal water or normal water;cover the lid & cook for 3-4 mins on low flame.
  • Open the lid & saute well.
  • Add 1/2 cup of water to cook potato and pumkin.
  • Cover the lid & cook for 5 mins on low flame.
  • After 5 mins open the lid & check whether potato cooked or not.
  • Now add cooked chana dal;mix well and cover the lid and cook for 5 mins on low flame.
  • Open the lid & mix well.
  • Finally add water as per your gravy consistancy.
  • Add garam masala and mix well.
  • Let it boil for 3-4 mins on low flame.
  • Then sprinkle coriander leaves and switch off the flame.
  • Cover the lid for 5 mins.
  • Serve hot with Poori or chakuli pitha.

Dalma is one of the most popular Odisha Authentic food.In Odisha Everyone cooking Dalma in Puja,Sankranti.Festival etc...

Dalma is combination of Moong dal,Pumkin,Papaya,Raw Banana,Brinjal etc...I cooked Dalma with Arhar dal & left over vegetables in my fridge.

If you don't have all vegetables,you can prepare Dalma whatever vegetables you have(excluding Karela).But the key ingredients of Dalma is Roasted Jeera & Dry chilli powder and Ghee.
Dalma is very good for health.You can have this with Roti, Rice, Paratha, Chakuli Pitha(Dosa).

Ingredients:

  • Arhar dal - 1/2 cup
  • Chana dal - 1/4 cup(optional)
  • Cauliflower - 10 florets
  • Ridge gourd - 1 small
  • Green chilli -1 
  • Carrot - 1 small
  • Beans - 10
  • Potatoes - 2 medium
  • Tomato - 1 medium
  • coriander leaves - 1 tbsp
  • Turmeric - 1 tsp
For Tempering:
  • Ghee - 1 tbsp
  • Refined oil - 2 tbsp
  • Jeera/cumin - 1 tsp
  • Grated ginger - 1 inch
  • Bayleaf - 1
  • Dry Chilli(broken) - 2
  • Coriander powder - 3/4 tsp
  • Coconut - 1/4 cup
  • Turmeric - 1/2 tsp
  • Chilli powder - 1/2 tsp or as required

For Masala powder : Dry roast it & make it powder

  • Jeera/Cumin seeds - 2 tbsp
  • Dry chilli - 4

Method:

  • Wash Arhar dal and chana dal.
  • In a pressure cooker put washed dal,all left over vegetables,tomato,water & mix well.
  • Add salt,turmeric and mix well.
  • Cover and cook on medium flame for atleast 2 whistle.
  • Release the pressure naturally.
  • Now dal and vegetables cooked perfectly.
  • Its time to tempering.
  • Heat ghee or oil.
  • Add bayleaf,Cumin seeds,dry chilli and grated ginger.
  • Saute it on low flame for 1 min.
  • Add cooked tomato and mash it.
  • Put chilli powder,turmeric and stir it.
  • Add coriander powder,little water and cook for 1 min on low flame.
  • Add coconut and mix it;cook for 1 min.
  • Finally add cooked dal and vegetables;mix well.
  • If required add little water and cook for 2 mins on medium flame.
  • add chopped coriander leaves and mix well.
  • Now its time to sprinkle roasted cumin and dry chilli powder and mix well.
  • Serve hot with Rice or paratha.
