Paneer tikka masala(ପନିର ଟିକା ମସଲା)

Ingredients:

Marination:

  • Paneer - 100 grm(ପନିର୍)
  • Onion(cube) -1 or 2(ପିଆଜ
  • Tomatos(cube) - 1(ଟମାଟର)
  • Curd - 3 tbsp(ଦହି)
  • Chilly powder - 1 tbsp(ଲଙ୍କା ଗୁଣ୍ଡ)
  • Coriander powder - 1/2 tsp(ଧନିଆ ଗୁଣ୍ଡ )
  • Cumin powder - 1/2 tsp(ଜିରା ଗୁଣ୍ଡ)
  • Ginger garlic paste - 1 tsp(ଅଦା ରସୁଣ ବଟା)
  • Mustard oil - 2 tbsp(ସୋରିଷ ତେଲ)
  • Kasturi methi powder - 1/2 tsp(କସ୍ତୁରୀ ମେଥି)

Gravy :
  • Onion(chopped) - 2 medium(ପିଆଜ
  • Tomato(chopped) - 1(ଟମାଟର)
  • Ginger garlic paste - 1 tsp(ଅଦା ରସୁଣ ବଟା)
  • Coriander powder - 1/2 tsp(ଧନିଆ ଗୁଣ୍ଡ )
  • Cumin powder - 1/2 tsp(ଜିରା ଗୁଣ୍ଡ)
  • Cashew paste - 1 tbsp(କାଜୁ)
  • Garam masala - 1/2 tsp(ଗରମ ମସଲା
  • Cumin seeds - 1/2 tsp(ଜିରା
  • Green chilly(slit) - 1(ଲଙ୍କାମରିଚ)
  • Cream or milk malai - 2 tbsp(କ୍ରିମ୍)
  • Kashmiri chilli powder - 1 tsp(ଲଙ୍କା ଗୁଣ୍ଡ)
  • Salt to taste(ଲୁଣ)

Method:

  • Cut the onion and paneer in cube size as well as cut the tomato and remove the seeds and keep a side.
  • Marinate the paneer and keep it in refrigrator for 20 mins. 


  • Heat oil in a pan.
  • Add Cumin seeds,when it starts to change color,then add onion and green chilly and saute it for couple of mins till onion transulate.
  • Add ginger garlic paste and saute it for some time till raw smell will go.
  • Then add chopped tomatos,coriander-cumin powder,turmeric-chilli powder and salt and mix well and cook it till tomatos mashed and masala cooked well.
  • Add cashew paste and cover and cook it for 2 mins on medium flame.
  • Then add cream and 1/2 cup water,mix will and cover it on medium flame for 5 mins.
  • Same time heat tawa and add oil and fry the marinated paneer and flip it well and fry it till it change the color. 

  • Finally add paneer tikka to masala paste and little water and cook for 2-3 mins on medium flame.
  • Add garam masala and mix well and serve hot with paratha or rice.

Ingredients:

  • Paneer - 1 cup (ପନିର୍)
  • Tomato(chopped) - 1 medium(ଟମାଟର)
  • Onion(choped) - 1 medium(ପିଆଜ)
  • Ginger and garlic(chopped) - 1 tsp(ଅଦା ରସୁଣ )
  • Turmeric powder - 1/2 tsp(ହଳଦୀ ଗୁଣ୍ଡ )
  • Red chilly powder - 1 tsp(ଲଙ୍କା ଗୁଣ୍ଡ)
  • Green chilly(chopped) - 2 tsp
  • Cumin seeds - 1 tsp (ଜିରା)
  • coriander powder - 1/2 tsp(ଧନିଆ ଗୁଣ୍ଡ )

Method:

  • Crumble the paneer/cottage cheese and keep aside.
  • Heat oil or ghee or butter in a pan. add cumin seeds and crackle them.

  • Add chopped garlic,grated ginger and green chilly. saute it for 1 min on low flame to remove ginger garlic raw smell.
 

  • Then add onions and saute it till onion became light brown color.

  • When the onions become translucent, then add tomatoes, salt,turmeric powder, chilly powder,coriander powder and mix it properly, cover and cook for 2 mins.









  • Saute it on low flame for couple of mins.
  • Then add 1/4 cup of water,stir it .

  • Add Chicken masala or curry powder,mix well.

  • Cover it & let it cook for 2 mins on low flame.
  • Open the lid,saute it and mash the tomato.

  • Finally, add the crumbled paneer,mix well.


  • Add 1/4 cup of water,cover it & let it cook for 2 mins on low flame.


  • Open the lid,mix well and sprinkle some coriander leaves.

  • Server hot with rice or roti.

Chilly Paneer

Ingredients 

  • 500 gms Paneer
  • Salt to taste
  • 1/2 cup Corn Flour
  • 1 Thumb size Ginger sliced
  • 4 Cloves of garlic sliced
  • 2 Onions sliced
  • 4 Sliced Green Chillies(or as spicy you like)
  • 1 tsp Soya Sauce
  • 2 tsp Vinegar
  • 1 pinch of Ajinomoto
  • 1/2 tsp Coriander(dhania)powder
  • 1/2 tsp Black pepper(kali mirch) powder
  • 4 tsbp tomato sauce
  • 2 tsbp chili sauce
  • Oil for frying
  • Little Water

Method

  • Cut the paneer into Rectangles.
  • Mix together the paneer,cornflour,salt,and little water to just coat the paneer pieces.
  • Heat oil in a pan and fry the coated paneer pieces  till golden brown and crispy.
  • Heat 2 tbsp of the oil in a non stick pan, stir fry the onions,garic,ginger, green chili and capcicum slices in it over high heat for half a minute.
  • Add a pinch of salt, soya sauce, vinegar, tomato sauce,chili sauce,ajinomoto and stir fry for 1 min.
  • Add black pepper powder,coriander powder and stir fry for 1 min.
  • Add the fried paneer ,mix well,leave it for 2 mins.
  • Garnish the chilli paneer with finely cut spring onions and coriander.
  • Serve hot with Fried rice or as snacks.

Paneer Curry

Ingredients

  • 250 gms. Paneer, cut into small cubes (cottage cheese)
  • 2 table-spoon oil
  • 1 onion
  • 1 tomato
  • 1 t-spoon ginger paste (adrak)
  • 1 t-spoon garlic paste (lahsun)
  • 1/4 t-spoon red chili powder (Lal Mirch)
  • 1/2 t-spoon coriander powder (pisa dhaniya)
  • 1/4 t-spoon garam masala
  • 1/2 t-spoon cumin (jeera)
  • 1/2 t-spoon turmeric (haldi)
  • 1 t-spoon chopped green chilies
  • 10-15 coriander leaves (dhaniya patti)
  • 1 table-spoon grated paneer
  • 1/2 cup water
  • salt to taste

 Method

  • Blend tomato and onion separately to make a puree.
  • Heat oil in a pan, add onion and tomato paste to it and stir. Cook until it gets golden brown and gravy leaves the oil.
  • Then, add ginger, garlic paste and cook further for a minute
  • Now add coriander powder, cumin, turmeric, garam masala and red chili powder and stir.
  • Add chopped green chillies and stir.
  • Add paneer and water cook over medium flame for 5 mins.
  • Finally garnish Paneer curry with finely chopped coriander leaves and grated paneer.
  • Serve Paneer curry hot with rice, chapati, pulao or naan.

Matar Paneer

Ingredients

  • 500 gms paneer cubed
  • 200 gms shelled peas
  • 2 large onions
  • 3 medium tomatoes
  • 1 tbsp ginger paste
  • 2 tbsps garlic paste
  • 2 tsps coriander powder
  • 1 tsp cumin powder
  • 2 tsps garam masala
  • 1/2 tsp turmeric powder
  • 2 green chillies chopped fine
  • 6 tbsps of oil
  • 1 1/2 cups water
  • Salt to taste
  • 3 tbsps thickened/ double/ heavy cream
  • Coriander leaves chopped fine to garnish

Method

  • Grind onions into a fine paste in a food processor. Keep aside.
  • Next grind tomatoes into fine paste and keep aside.
  • Heat 2-3 tbsps of oil in a pan and gently stir-fry the cubes of paneer till golden. Remove onto a paper towel and keep aside.
  • In the same vessel heat 2-3 tbsps of oil and add the onion paste. Fry till it turns light brown.
  • Add tomato paste, ginger and garlic paste and fry for another 2 minutes.
  • Add the coriander, cumin, turmeric and garam masala powders, green chillies and fry, stirring continuously till the oil begins to separate from the masala (spice mixture).
  • Add the peas to the masala and fry for 2-3 minutes.
  • Then add the paneer, water and salt, reduce flame to a simmer and cook till the gravy thickens.
  • When the gravy is as thick as you would like, turn off the flame and stir in the cream.
  • Garnish with coriander leaves and serve.
  • Mutter paneer tastes great with parathas, naans and even jeera rice.

Paneer Masala

Ingredients

  • 350 gms paneer(cottage cheese)
  • 2 tomatoes
  • 1/2 cup fresh cream
  • 1 tsp chilli sauce (optional)
  • 3 tbsp ghee
  • ghee for deep frying
  • salt to taste
To Be Ground Into A Paste 
  • 1 large onion
  • 1 tbsp khus-khus
  • 2 sticks cinnamon (dalchini)
  • 2 cloves (laung / lavang)
  • 10 peppercorns (kalimirch)
  • 6 red kashmiri chillies
  • 3 tsp coriander (dhania) seeds
  • 1 1/2 tsp cumin seeds (jeera)
  • 5 garlic (lehsun) cloves
  • 25 ginger (adrak)

Method
  • Cut the paneer into long pieces and deep fry in ghee.
  • Chop the tomatoes.
  • Heat the ghee in a vessel. Fry the paste for at least 3 to 4 minutes.
  • Add the chopped tomatoes and fry again for 3 to 4 minutes.
  • Add the paneer pieces, chilli sauce, salt and 1 teacup of water and cook for 10 minutes.
  • Serve hot with parathas.

Paneer Butter Masala

Ingredients:

  • 200 or 250 gms paneer/cottage cheese, cubed or diced
  • 2 tbsp cashew – soaked if you have time and then ground with some water to a smooth paste. if less time, then just grind the cashews to a smooth paste.
  • 4-5 medium size tomatoes – pureed
  • 1 or 2 green chili, slit (reserve a few for garnishing)
  • 1 inch ginger and 3-4 garlic – crushed or ground in a mortar & pestle
  • 1 inch ginger – julienned (reserve a few for garnishing)
  • 1 tbsp oil + 1 or 2 tbsp butter
  • 1 tsp kasuri methi/dry methi leaves
  • ½ tsp red chili powder
  • 1 tsp garam masala or tandoori masala
  • 1 bay leaf/tej patta
  • 1.5 cups water
  • a few coriander/cilantro leaves for garnishing (optional)
  • salt and sugar as required – check notes below for adding sugar

Method

  1. heat oil and butter in a pan.
  2. add bay leaf and fry for some 10-15 seconds or till the oil become fragrant.
  3. add ginger-garlic paste and fry till the raw aroma disappears.
  4. add the tomato puree and stir well.
  5. add red chili powder after 2-3 mins and stir again.
  6. saute till the oil starts to leave the sides of the tomato paste.
  7. add cashew paste and stir well.
  8. saute the cashew paste till the oil begins to leave the sides of the masala paste.
  9. add water and stir.
  10. simmer on a low flame.
  11. add julienned ginger and green chilies, salt and sugar and simmer till the curry begins to thicken.
  12. add the paneer cubes and cook them for 2-3 minutes till they become soft.
  13. don’t cook for a long time as the paneer will become dense.
  14. lastly add crushed kasuri methi/dry fenugreek leaves & garam masala. stir.
  15. garnish with coriander leaves and serve hot with plain naan, garlic naan, rotis or steamed basmati or jeera rice. side accompaniments can be onion-lemon salad or some pickle.
