- Bhindi/okra - 200-250 gms(ଭେଣ୍ଡି)
- Onion(chopped) - 1 medium(ପିଆଜ)
- Tomatoes(paste) - 1 medium(ଟମାଟର)
- Ginger garlic paste - 1 tsp(ଅଦା, ରସୁଣ)
- Coriander powder - 1or 1/2 tsp (ଧନିଆ ଗୁଣ୍ଡ)
- Red chili powder - ¼ or ½ tsp(ଲଙ୍କା ଗୁଣ୍ଡ)
- Turmeric powder - ½ tsp (ହଳଦୀ ଗୁଣ୍ଡ)
- Garam masala powder - ½ tsp (ଗରମ ମସଲା ଗୁଣ୍ଡ)
- salt as required (ଲୁଣ)
- 3 tbsp oil (ତେଲ)
- Rinse the bhindi well in water.
- Dry them on a large plate on their own or wipe with a kitchen towel.
- Remove the base and stalk while chopping the bhindi.
- Chop into 1 or 2 inch pieces.
- Heat 2 tbsp oil in a pan.
- Add the bhindi and saute it for 3-4 mins.
- Add 1 tbsp oil to the same pan.
- Add chopped onions and fry till they become translucent.
- Add the ginger-garlic paste, salt, turmeric powder,red chilli powder and saute for a minute or till the raw aroma of the ginger-garlic disappears.
- Add tomatoes paste and saute till the tomatoes are cooked properly.(if the tomato mixture becomes too dry add about ¼ or ½ cup water and continue to cook.)
- Add coriander powder, cumin powder one by one.stir well and saute for a minute.
- Add the sauted bhindi and mix so that the onion-tomato masala coats the bhindi well.
- Cook for some time till bhindi cooked properly. (stir in between or u can cover the lid for some time).
- Serve the bhindi masala hot with rotis or naan.
