Fish head with cabbage (ମାଛ ମୁଣ୍ଡ ଛିନ୍ଚଡା)
- Cabbage - 1 Medium(chopped) (ପତ୍ର କୋବି)
- Potatoes - 2 (cut into medium cubes) (ଆଳୁ)
- Rohu fish head - 1 (big) (ମାଛ ମୁଣ୍ଡ)
- Tomato - 2 (chopped) (ଟମାଟର)
- Onion - 2 (chopped) (ପିଆଜ)
- Green chillies - 4-5
- Ginger paste - 1 tsp (ଅଦା ବଟା)
- Turmeric powder- 1 1/2 tsp (ହଳଦୀ ଗୁଣ୍ଡ)
- Cumin powder - 1 1/2 tsp (ଜିରା ଗୁଣ୍ଡ)
- Red chilli powder - 1 tsp
- Garam masala powder - 1 tsp (ଗରମ ମସଲା)
- Salt to taste (ଲୁଣ)
- Mustard oil - for cooking (ସୋରିଷ ତେଲ)
For saute:
- Cardamom - 4-5 (ଗୁଜୁରାତି)
- Cinnamon- 1"stick (ଡାଲ୍ଚିନି)
- Bay leaves - 2 (ତେଜ ପତ୍ର)
- Cloves - 4
- Dry red chillies - 2
Method:
- Cook the cabbage with 2 cups of water and little turmeric powder in a pressure cooker in high flame till one whistle.
- Remove from heat and release the steam by holding a spoon under the regulator of the cooker. Strain the cabbage in a sieve and dispose the water.
- Heat oil in a pan and fry the fish head with salt and turmeric powder till it turns brown in colour. Remove from the pan and keep it aside breaking it into a few pieces. In the same oil, fry the potato cubes till brown and keep aside.
- In the same pan heat oil and add the ingredients under saute and allow them to crackle. Add the chopped onions and fry till it changes colour.
- Add tomatoes and fry them in low heat till the tomatoes soften. Now add the potatoes and cabbage and stir well to mix in.
- To this cabbage mixture add turmeric powder, red chilli powder, cumin powder, ginger paste, green chillies and mix nicely so that they blend well.
- Add fish head pieces and cook uncovered stirring occasionally till the potatoes turn soft and the cabbage gets mixed up nicely with the spices and the fish head pieces.
- When almost done sprinkle garam masala powder and cook for 2 -3 mins. Turn off the heat.
- Serve with steamed rice or roti.
