Vegetable Pulao(ପଲଉ)

Ingredients:



  • 3 tsp Oil
  • Whole Garam Spices - 2 bay leaf
    3~4 cloves
    3~4 black pepper corn
    2 green cardamom
  • 1 cup Basmati Rice
  • 1 Onion sliced
  • 1 tsp Ginger Garlic paste
  • 1 tsp Cumin seeds
  • Cauliflower cut in to florets
  • Green Beans
  • Carrot
  • Frozen Corn
  • Green Peas
  • Paneer cut in to cubes
  • 2 slit Green Chillies

    • Basmati/plain rice - 1 cup(ଚାଉଳ)
    • Beans - 1 cup(ବିନ୍ଶ୍)
    • Carrot - 1/2 cup(ଗାଜର)
    • Green peas - 1/2 cup(ମଟର)
    • Onion(slice) - 1(ପିଆଜ
    • Green chilli(slit) - 2(ଲଙ୍କାମରିଚ)
    • Ghee/Oil - 2 tbsp(ଘିଅ)
    • Cauliflower - 5-6 florets(ଫୁଲକୋବି)
    • Paneer(cube) - 1 cup(optional)(ଛେନା)
    • Salt to taste(ଲୁଣ)
    • Water -2 cup(ପାଣି
    • Cumin seeds - 1 tsp(ଜିରା)
    • Ginger(chopped) - 1 tbsp(ଅଦା)
    • Black pepper - 10(ଗୋଲ୍ ମରିଚ
    • Cinnamon - 1 stick(ଡାଲଚିନି)
    • Cardamom - 2(small)(ଗୁଜୁରାତି
    • Clove - 2-3(ଲବଙ୍ଗ)
    • Bay leaf - 1(ତେଜ ପତ୍ର

    Method:

    • Wash basmati rice 3 to 4 times in cold water. Then soak with enough water for 30 mts(if you are using normal rice,then no need to soak).
    • After 30 mts, drain off all excess water from rice.
    • Heat the ghee in a pressure cooker, put all whole garam masala(Black pepper,Cinnamon, Cardamom,Cloves,Bay leaf) and saute for couple of mins.
    • Then put the drained rice in to the pan,then add 2 cups of hot water and salt to taste and mix well.
    • Cover the lid and cook on medium flame for 1-2 whistle(depends on rice quality).
    • Meanwhile heat the oil in separate pan.
    • Add sliced ginger and green chillies, onion and saute it till onion became lighr brown color.
    • Then add carrots, beans,green peas,cauliflower and  mix it properly.
    • Sprinkle a pinch of salt over veggies, mix well and cook for 3 to 4 mts till the vegetables turn tender or cooked .
    • After rice is cooked ,open the lid and add all cooked vegetables in the rice.
    • Mix gently all vegetables with the rice.
    • Cover lid for 5 more minutes.
    • Serve hot with raita or any curry of your choice.
