Tomato egg rice(ଟମାଟର ଅଣ୍ଡା ରାଇସ୍)


Ingredients:

  • Cooked rice – 2 cups (basmati/normal)(ଚାଉଳ)
  • Onion(chopped) – 1 medium(ପିଆଜ)
  • Green chillies(chopped) – 3 nos
  • Carrots(grated) – 1 cup (optional)(ଗାଜର)
  • Tomato(chopped) – 1-2(ଟମାଟର)
  • Ginger and garlic(grated/chopped) – 1 tsp(ଅଦା ରସୁଣ)
  • Turmeric powder – ½ tsp(ହଳଦୀ ଗୁଣ୍ଡ ) 
  • Chilly powder – ½ tsp(ଲଙ୍କା ଗୁଣ୍ଡ) 
  • Whole garam masala(optional) (ଗୁଜୁରାତି) (ଡାଲଚିନି) (ଗୋଲ୍ ମରିଚ
  • Bayleaf - 1 (ତେଜ ପତ୍ର)
  • Salt to taste(ଲୁଣ)
  • Mustard seeds – 1/2 tsp(ସୋରିଷ)
  • Jeera – 1/2 tsp(ଜିରା)
  • Egg - 2(ଅଣ୍ଡା)
  • Curry leaves – 1 sprig, if you have in hand
  • Oil - 3 tbsp(ତେଲ)

Method:

  • Heat the oil in a pan, same time beat the eggs with adding little salt and put in the pan and stir fry for 2-3 mins and keep a side. 
  • In the same pan heat little oil and  splutter mustard seeds and jeera.
  • Then add whole garam masala,onion, green chilies, curry leaves, grated/chopped ginger and garlic and saute for 1 minute.
  • Then add tomato,turmeric powder,chilly powder and salt. Just fry for 2 to 3 minutes. Don’t fry too much, tomatoes should be still half cooked.
  • Add the rice, fried egg and  mix them gently. Serve hot with raita/tomato sauce.
