Bhindi pepper/Kalimirch fry(ଭେଣ୍ଡି ଗୋଲ୍ ମରିଚ ଭଜା)

Ingredients:

  •  Lady fingre/Bhindi - 250 grm(ଭେଣ୍ଡି)
  • Onion(slice) - 1 large(ପିଆଜ)
  • Cumin seeds - 1 tsp(ଜିରା)
  • Oil - 2 tbsp(ତେଲ)
  • Green chilly - 2
  • Black pepper(powder/crushed) - 1 tsp (ଗୋଲ୍ ମରିଚ)
  • Gralic clove(chopped) - 10(ରସୁଣ)
  • Salt to taste  (ଲୁଣ)

Method:

  • Clean and wash the bhindi,let them dry before beginning the preparation of dish.
  • Cut the bhindi in slanting direction into 2 parts.
  • Heat the 1 tbsp oil in a pan, put bhindi and stir fry them for 2-3 mins and keep a side.
  • In the same pan heat remaining oil and add cumin seeds and as they crackle add green chilly,chopped garlic and onion and saute it till for 2 mins.
  • Add bhindi, salt ,black pepper and mix it properly and cook it uncovered until done.
  • Server hot as side dish with rice and dal



I prepared okra by washing clean and patting them dry before beginning with the preparation for this stir fry. Once air dried, trim the ends and cut them in slanting direction into 4 parts. This will reduce the sliminess in the dish. 

In a non stick pan, heat 1 tsp oil. Add slant cut bhindis and shallow fry them for 2 mins. Remove them from the pan and place them aside in a plate. In the same pan heat remaining oil, add cumin seeds and as they crackle add red chillies. Stir fry, next add slant sliced onions and chopped garlic. Saute them till they turn light brown. Next add the shallow fried bhindis, turmeric powder, crushed black pepper or pepper powder. Mix it nicely, add finely chopped mint leaves and cook it uncovered until done. Add amchur powder, salt to taste and toss everything well. Switch off the flame. Garnish with fresh mint leaves [optional]. Enjoy it hot with rotis or naans.

200 gms okra
200 gms onions [I have used regular one here, you may use shallots], finely sliced
1/2 tsp cumin seeds
2 small round red chillies
4-6 garlic cloves, finely chopped
1/4 tsp turmeric
1 tsp amchur powder
3/4 tsp crushed black pepper/ 1.5 tsp black pepper powder [you may adjust as per your liking]
2-3 tbsp finely chopped pudina
