Saga Kharada(ଶାଗ ଖରଡା)

Ingredients:

  • Drumstick leaf(ସଜନାଶାଗ) – 100 grm
  • Khada/ Kosola Leaf (ଖଡା ଶାଗ)– 100 grm
  • Kakharu/Pumkin leaf (କଖାରୁ ଶାଗ) – 100 grm
  • Pumkin/Kakharu(କଖାରୁ)(cube sized)– 100 grm
  • Poi/basella leaf (ପୋଇ ଶାଗ) – 10 big size leaf
  • Garlic (ରସୁଣ) – 1/(as flavour)
  • Chuda/poha (ଚୁଡା) – 25 grm
  • Mustard Oil (ସୋରିଷତେଲ) – 2 tbsp
  • Mustard seeds(ସୋରିଷ) - ½ tsp
  • Cumin seeds(ଜିରା) – ½ tsp
  • Salt as taste (ଲୁଣ)
  • Dry Chilli (ଶୁଖିଲାମରିଚ) - 2

Method:

  • Clean and cut  Drumstick leaf, pumkin leaf, Poi/basella leaf and Khada/ Kosola Leaf  and keep aside in separate separate  plate.
  • Grind poha and garlic(donot add water).
  • Heat Oil in a pan.
  • Add Cumin seeds, Mustard seeds, and dry chilli and when seeds begins cracking, add Garlic and stir fry till garlic become brown.
  • Add pumkin and fry for 3 mins.
  • After 3 mins add Khada/ Kosola Leaf , pumkin leaf, Poi/basella leaf and salt and cover it for 5 mins.
  • Then add drumstick leaf and cover it for 3 mins.
  • Open lid and press all the leaf through spoon.
  • Add poha and garlic paste(for soaking water).
  • Saute it for 3 mins in slow flame.
  • Server hot with rice.
