Vegetable Korma (ଭେଜିଟେବୁଲ କୋର୍ମା)


Ingredients:
  • 2 carrots cubed (ଗାଜର)
  • 1 cup cauliflower florets (ଫୁଲ କୋବି)
  • 1/2 cup green beans chopped (ବିନ୍ସ)
  • 1 potato cubed (ଆଳୁ)
  • 1/2 cup green peas (ଗ୍ରିନ୍ ମଟର)
  • 1/2 cup Paneer(ପନିର)
  • 1 onion sliced thin (ପିଆଜ)
  • 8 green chillies, slit
  • 1 tbsp ginger garlic paste (ଅଦା, ରସୁଣ ବଟା)
  • 1/2 cup grated coconut (ନଡିଆ)
  • 2 tbsp poppy seeds
  • 6 cashews (କାଜୁ)
  • 1 cup milk (ଖିର)
  • 1 tbsp cilantro chopped (ଧନିଆ ପତ୍ର)
  • 1 tbsp oil (ତେଲ)
  • 4 cloves
  • 1 cinnamon stick (ଡାଲଚିନି)
  • 4 cardamom pods
  • 2 bay leaves (ତେଜ ପତ୍ର)
  • salt to taste (ଲୁଣ)
Method:
  • Warm about 1/4 cup of milk and add the poppy seeds and cashews. Let it soak for 15-20 minutes. Grind this mixture along with the coconut and 2 green chillies to a fine paste, adding water or milk as necessary and keep aside
  • Heat oil in a pan over medium high heat: Add the cinnamon, cloves, cardamom pods and bay leaves. Let the spices fry in the oil. 
  • Add the onion and fry until soft. 
  • Add  ginger garlic paste and saute until the raw smell disappears.  
  • Add the carrots, beans and potatoes and a cup of water. Cover the pan and cook until the vegetables become soft. 
  • Add the cauliflower, frozen peas, Paneer ,the ground paste and any remaining milk. 
  • Let this simmer for about 5-10 minutes until thickened. Sprinkle with the cilantro.
  • Serve hot with rice, paratha
