Vegatable Poha Upma (ଚୁଡା ଉପ୍ ମା)


Ingredients
  • 3 cup Poha (ଚୁଡା)
  • Ground nuts (ବାଦାମ))
  • 1 small sized chopped potato (ଆଳୁ)
  • 1 medium sized chopped onion (ପିଆଜ)
  • ¼ cup peas (ଗ୍ରୀନ ମଟର)
  • ¼ cup chopped carrot (ଗାଜର)
  • 1 medium sized fine chopped tomato(ଟମାଟର)
  • 2 chopped green chillies
  • 1 tbsp. fresh curry leaves
  • ½ tsp. mustard seed(ସୋରିଷ)
  • 1 tbsp. oil (ତେଲ)
  • Salt to taste (ଲୁଣ)
  • ½ tsp. turmeric powder (ହଳଦୀ ଗୁଣ୍ଡ)
Method:
  • Wash the poha nicely and strain out all the water and keep aside.
  • Heat the oil in a wok or kadai. Add mustard seeds (rai and sarso). 
  • When they start to splutter add Ground nuts, curry leaves ,onions and green chillies, chopped carrots, potatoes and green peas . Let the vegetable cook for 3-4 mins.
  • Then Add chopped tomatoes,turmeric powder and sauté for 5 minutes more, when veggies look soft and cooked.
  • Add poha and salt. Mix well. 
  • Serve hot with green sauce or tamato sauce.
