Lemon Rice


Ingredients:
  • Rice- 2 cups (ଚାଉଳ)
  • Water- 4 cups (ପାଣି)
  • Lemons - 2(ଲେମ୍ବୁ)
  • Green chillies(chopped)-5
  • Ground nuts - ½ cup (ବାଦାମ୍)
  • Curry leaves- 2 sprigs
  • Salt to taste (ଲୁଣ)
  • Mustard seeds- 1tsp (ସୋରିଷ)
  • Channa dal - 1 tsp (ଚଣା ଡାଲି)
  • Turmeric powder  – 1 tsp (ହଳଦୀ ଗୁଣ୍ଡ)
  • Red dry chillies (broken) - 3
  • Black gram (urad dal) - 1 tsp (ବିରି ଡାଲି)
  • Oil - 4 tsp(ତେଲ)
Method:
  • Rinse and drain rice. Cook in 4 cups of water, 2 tsp oil, Turmeric powder and salt . Set aside.
  • Heat the oil in a wide pan.
  • Add mustard seeds,Red Dry chillies, Curry leaves and urud dal. Allow mustard seeds to splutter. 
  • Then add ground nuts, green chilli. Saute for 1min. Turn off the heat.
  • Add the lemon juice and mix well.
  • Add the rice and  salt to taste and mix thoroughly.
  • Cook on low heat till the rice gets heated through and serve hot.
