Ivy Gourd Fry (କୁନ୍ଦୁରି ଭଜା)


Ingredients:

  • Kunduru(slice) - 250 gram(କୁନ୍ଦୁରି)
  • Onion(slice) - 2 medium(ପିଆଜ)
  • Potato - 2 medium(optional) (ଆଳୁ)
  • Turmeric powder - 1 tsp(ହଳଦୀ ଗୁଣ୍ଡ )
  • Dry chilly - 2(ଶୁଖିଲା ଲଙ୍କା)
  • Oil - 2 tbsp(ତେଲ
  • Cumin seeds - 1 tsp(ଜିରା)
  • Garlic(crushed) - 6 cloves(ରସୁଣ)
  • Gram flour - 2 tbsp(optional)(ବେସନ)
  • Chilly powder - 1/2 tsp(optional)(ଲଙ୍କା ଗୁଣ୍ଡ)
  • Salt to taste(ଲୁଣ)

Method:

  • Wash the kunduru, cut it and keep a side.
  • Heat the oil in a pan.
  • Add jeera,crushed garlic and dry chilly,when it starts cracking,add kunduru,salt, turmeric powder and fry it for 5 mins.
  • Then add sliced onion and saute it and fry it till kunduru cooked properly .
  • Finally add red chilly powder and gram flour and stir it for 5 mins.
  • Serve hot with rice and dal.
