Instant Egg Uttappam


Ingredients:
  • Curd - 1/4 cup (ଦହି)
  • Semolina - 1/4 cup (ସୁଜି)
  • Rice Flour - 1/2 cup (ଚାଉଳ ଗୁଣ୍ଡ)
  • Salt - to taste (ଲୁଣ)
  • Onion(chopped) - 1 medium (ପିଆଜ)
  • Coariander Leaves(chopped) - 2 tsp (ଧନିଆ ପତ୍ର)
  • Baking soda - 1/4 tsp
  • Water - as required (ପାଣି)
  • Egg (ଅଣ୍ଡା)
  • Black Pepper(crushed) - 1/2 tsp (ଗୋଲ ମରିଚ)
  • Green Chilli(chopped) - 2-3
  • Tomato(chopped) - 1 medium (ଟମାଟର)
  • Oil (ତେଲ)
Method:
  • In a bowl, mix together Curd, Semolina, Rice flour, Baking soda, crushed black pepper,salt and little water & whisk into a smooth batter.
  • Keep aside for 30 min.
  • Heat a non stick tawa, drizzle a little oil& spread it all over the tawa with a tissue paper.
  • Put a ladle full of batter and spread into a thick round uttappam.(medium flame)
  • Sprinkle onion, tomato, green chilli and coriander leaves.
  • Break an egg and drop over the uttappam.
  • Drizzle a little oil all around.
  • When the underside is golden, carefully flip it and  cook till the other side is equally golden.
  • Serve hot.
