Chicken Biriyani(ଚିକେନ୍ ବିରିୟାନୀ)


Ingredients:
  • Chicken - 500 grm
  • Onion(slice) - 2 medium(for garnish)(ପିଆଜ
  • Coriander leaves(chopped) - 2 tbsp(ଧନିଆ ପତ୍ର)
  • salt to taste(ଲୁଣ)
  • Ghee - 3-4 tbsp(ଘିଅ)
  • Cooking oil - 2-3 tbsp(ତେଲ
  • Turmeic powder - 1/2 tsp(ହଳଦୀ ଗୁଣ୍ଡ ) 
  • Chilli powder - 1 tsp(ଲଙ୍କା ଗୁଣ୍ଡ)
  • Chicken masala powder -  1 tbsp(ଚିକେନ୍ ମସଲା ଗୁଣ୍ଡ )
  • Curd - 1 cup(ଦହି
  • Pudina leaves(chopped) - 1 tbsp
  • Green chillies (slit) - 4(ଲଙ୍କାମରିଚ)
For marination:
  • Curd/yogurt - 1/2 cup(ଦହି
  • Ginger garlic paste - 1 tbsp
  • Red chilli powder - 1 tsp(ଲଙ୍କା ଗୁଣ୍ଡ)
  • Turmeric powder - 1/2 tsp(ହଳଦୀ ଗୁଣ୍ଡ
  • Coriander powder - 1/2 tsp(ଧନିଆ ଗୁଣ୍ଡ )
  • Lemon juice - 1 tsp(ଲେମ୍ବୁ ରସ)
  • Salt to taste(ଲୁଣ)
Biryani masala paste and powder:
  • Cloves - 5(ଲବଙ୍ଗ)
  • Cinnamon stick - 1 inch(ଡାଲଚିନି)
  • Cardamom - 2(ଗୁଜୁରାତି 
  • Pepper corns - 10(ଗୋଲ୍ ମରିଚ
  • Onion(cube) - 2 medium(ପିଆଜ
  • Ginger - 1 inch
  • Garlic -1 pod(ରସୁଣ
  • Tomato(paste) - 2(ଟମାଟର) 
Ingredients to cook rice:
  • Rice - 1 grass(ଚାଉଳ)
  • Cloves - 4-5(ଗୋଲ୍ ମରିଚ
  • Cardamoms - 2(ଗୁଜୁରାତି)  
  • Cinnamon stick - 1 inch(ଡାଲଚିନି)
  • Bay leaves - 1(ତେଜ ପତ୍ର)
  • Star - 1
  • Oil - 1 tbsp(ତେଲ)
  • Salt to taste(ଲୁଣ)
  • water as required(ପାଣି
Method:
  • Marinate chicken with the above ingredients and keep aside for 1 hrs.
  • Cook basmati rice in lots of water along with bay leaves, cloves, cinnamon, cardamom, elaichi, oil, salt till its half cooked. Strain the water and spread the rice on a large wide plate. Allow to cool.
  • Heat 1 tbsp oil in a vessel, add sliced onions, saute for 8-10 mts till caramelized. Remove and keep aside and chop the coriander and pudina leaves also.
  • Heat the pan and dry roast Cloves,Cinnamon stick,Cardamom,Pepper corns and make powder and keep a side and  grind ginger,garlic,onion and tomato to make fine paste.

  • in a same pan,heat 2 tbsp oil;add green chillies and saute it for 5 secs;put grind masala paste along with turmeric,chilli powder and salt and saute it till masala cooked well.
  • Then add 1 cup curd,1 cup water and mix well and cook for 5 mins.After 5 mins,add marinated chicken,1/2 tsp dry roast garama masala power,chicken masala powder and mix well,cover it and cook till chicken is half cooked  and gravy became little dry.
  • Take a wide deep vessel to prepare the biryani. Add 2 tbsps ghee.
  • Add 1/2 of cooked chicken and spread out over the vessel and reduce flame.
  • Spread half of the rice over the chicken layer, pour half a tbsp of ghee all over the rice, add half of the caramalized onions and spread over the rice. Next sprinkle a tbsp of coriander leaves and dry roaste powder.
  • Add remaining 1/2 chicken and spread the remaining rice over chicken. Again pour half a tbsp of ghee all over, add remaining caramelized onions  over the rice. Finally sprinkle a tbsp of coriander leaves,pudina leaves and dry roast powder over the rice.
  • Cover the lid and cook biriyani atlesat 20 mins on low flame.Switch off the flame.
  • After 10 mins, remove lid, combine gently and serve hot with raita and curry of your choice.
