This is very easy home style chicken masala.In Odisha we call Chicken Kasha.
There are many different ways to cook masala chicken.Each region has their own way to cook chicken masala.

I cooked this Chicken Kasha using Onion,Ginger and Garlic paste and with roasted garam masala.Its very delicious and aromatic.You can have this with Rice,Jeera Rice,Naan,Paratha etc.

Ingredients:

  • Chicken -500 grm
  • Onion(chopped) - 3 medium
  • Turmeric powder -1 tsp
  • Red chili powder - 1 tsp or as taste
  • Garam masala powder -1 tbsp
  • Chicken masala - 1 tsp
  • Bay leaves - 1
  • Mustard oil - 3 tbsp
  • Salt to taste

For Masala: Coarse paste

Onion - 2 medium
Garlic - 1 pod or 20 cloves
Ginger - 1 inch

For Garam Masala : Dry roast & make powder

Cinnamon stick - 1/2 inch
Cardamom - 1
Cloves - 4
Black pepper - 4

Method

  • Heat oil in a non stick pan. 
  • Add bayleaf,chopped onion and saute it for couple of mins on medium flame.
  • Then add 1 tsp salt so that Onion loses water so fast.
  • When Onion turns golden color, then add Turmeric and chilli powder and saute it for couple of mins.
  • Then add ground masala and mix well.
  • Cook the masala on low flame for 15 mins so that masala raw smell will go and Masla starts leaving oil.
  • Now its time to put chicken and mix well.
  • Cover the lid and cook for 5 mins on low flame.
  • Now add chicken masala,salt and mix well.
  • Again cover the lid and cook till chicken and potatoes cooked well.
  • In between stir the chicken along with the masala slowly.
  • When the water evaporates and chicken pieces becomes tender add garam masala powder.Cover it for another 4 minute in low flame.
  • Remove it from fire and server hot and enjoy with steamed rice or parathas.
